Homemade Potato Latkes

We love tradition in our family. And with traditions, it usually centered around food. It has a way of bringing us all together. 

Many of you will be lighting the candles for the first night of Hanukkah over Thanksgiving weekend, and we wanted to share tried and true (and easy!) Potato Latke & Homemade Applesauce recipes with you.

Ingredients can all be found here!

4 large eggs
4 Tbsp flour
2 Tsp coarse salt
Pinch of black pepper
2 small onions, peeled
4 potatoes, peeled (sweet potatoes or Idaho russet potatoes)
Peanut or canola oil

In a mixing bowl, whisk together the eggs and flour until smooth. Either grate or chop the potatoes using the shredding blade that spins at the top of a food processor – if you don’t have this, you can grate with a box grater by hand. Follow this same step with the onions (or you can just dice them).

Add both the shredded onions and potatoes to the egg mixture and combine all ingredients together. There may be some liquid remaining in the mixture.

Add enough oil to cover the bottom of a frying pan with about 1/4 inch of oil, making sure the oil is hot before adding latkes to the mix. You can use and ice cream scoop or spoon heaping tablespoons of the potato mixture into the heated oil and flatten out each latke. Fry until golden brown on each side, approximately 3-5 minutes. Add additional oil into the frying pan as needed.

Place latkes on paper towels to remove excess oil.

Serve with Applesauce (see recipe below!) and/or Sour Cream

Homemade Applesauce

3 lb. apples
2 c. water
1-3 cinnamon sticks or 1 tsp Victoria Gourmet cinnamon
Optional: 2 tbsp sugar

Peel, core, and coarsely chop the apples into 1/2 inch pieces. Put the apple chunks into a medium sized saucepan, adding the water and cinnamon stick(s) or cinnamon and bring to a gentle boil over medium heat.

Lower the heat to medium low and boil for 20-30 minutes uncovered, stirring occasionally.

When the apples are soft, remove from heat and stir to break down the chunks, remove cinnamon stick if you used one.

Cool to room temperature and serve with your latkes or eat on its own!
