WINEMAKER NOTES | Located in Piglio, just south of Rome in Lazio, cousins Daniele Proietti and Pierluca Proietti are making natural yet traditional wines. “We come from humble farming families. We have a natural agricultural approach, often quite personal, in constant flux, that reflects who we are: a fusion of local traditions and of something that is deeply cultural, that we’ve built from the teachings and influences of the many natural methods that we’ve experimented through the years. Our cellar is a small country house in the mountains, our only tools, coordinated only by our heads and hands.” This wine is from the grape Cesanese from vines ranging from 16-81 years old. Spontaneous fermentation – 8 days of maceration followed by racking. Final fermentation without lees. Aged in stainless steel until spring.
