Delicata Squash season is upon us, and we cannot get enough of them – their peel is edible, and gets perfectly crispy! They couldn’t be easier to prepare!
1) Preheat oven to 425°F (If you have an air fryer, that works WONDERS with delicata squash, too!)
2) Carefully slice off just the tippy top and the very bottom of the squash and slice the squash lengthwise in half. Use a spoon to scoop and discard the seeds on each side.
4) Lay each half flesh side down and slice into 1-inch increments down the length of the squash
5) Transfer slices into a large bowl and drizzle with 2 tbsp olive oil, salt, pepper, and toss evenly.
6) Transfer to a baking sheet, ensuring the pieces do not overlap and are not touching. Roast until golden brown about 15 minutes. Use tongs to flip each slice and continue to roast another 10-12 minutes until golden brown. *If you have an air fryer, prepare the squash as directed, and roast for 15-20 minutes on 400, flipping the pieces halfway through roasting, until golden brown.
