SCALLOP CRUDO WITH RADISH, CUCUMBER AND SHISO APPETIZER

• 4 ounces raw scallops
• 1-2 watermelon radishes
• 2 Turkish cucumbers
• Fresh shiso leaves

Dressing

• Drizzle olive oil
• Squeeze of lemon
• Salt and pepper to taste
• Aleppo chili flakes

Instructions

1. Thinly slice scallops.
2. Thinly slice radishes and cucumbers.
3. Slice shiso leaves or make ribbons.
4. Divide among plates, arranging to your liking.
5. Drizzle with olive oil and squeeze with lemon, season with salt and pepper. Garnish with shiso and Aleppo flakes
6. Keep very cold until ready to serve.

Using advanced freezer technology, all fish and shellfish is super-frozen to temperatures below -61 degrees Fahrenheit for a minimum of 24 hours. This process is necessary to reduce the risk of consuming raw, wild seafood. Our commercial super freezer accelerates the freezing process, and preserves the texture of the proteins by reducing expansion of water molecules within the flesh.

Retain world class sushi quality under refrigeration and consume raw within two days. This elite restaurant quality may also be preserved in a freezer for up to seven days. Make sashimi, nigiri, chirashi bowls and poke bowls.
