Peach & Tomato Toast

Peach toast! With Bacon dressing! We can’t think of a better sounding breakfast snack. Between the toasted bread, goat cheese layer, perfect peaches and terrific tomatoes, PLUS beautiful bacon… have fun just eating one!
Ingredients:
1/4 cup extra virgin Olive Oil
Desired amount of slices of Sourdough
1 log Goat Cheese, at room temperature
2 Peaches, chopped or sliced
1 cup Grape Tomatoes, halved
Dressing:
6 thick-cut slices of Bacon, chopped
1/4 cup extra virgin Olive Oil
2 tablespoons White Wine Vinegar
1 tablespoon Honey
1/4 cup fresh Basil, chopped
Chili flakes
Salt and Black Pepper
Instructions:
1. To make the dressing: combine all ingredients except the bacon in a glass jar and whisk until smooth.
2. Cook the bacon in a large skillet over medium heat until crisp. Drain onto a paper towel. Chop and stir the bacon into the dressing.
3. Preheat your grill to high heat or preheat your oven to 400° F.
4. Toast your bread and spread goat cheese on the warm bread.
5. Toss the peaches and tomatoes with a few tablespoons of dressing. Top with the dressing, peaches/tomatoes, and fresh basil. Drizzle over the remaining dressing.
