Sfoglini Summer Pasta Salad

A great classic macaroni salad can’t be beat in the summer! Serve this recipe up or make your own adjustments for all your guests to enjoy! Have extra? Throw it in the fridge for delicious lunch leftovers!
Ingredients:
4 cups uncooked Sfoglini pasta
1 cup Mayonnaise
1/4 cup Apple Cider Vinegar
2/3 cup White Sugar
2 1/2 tbsps Yellow Mustard
1 1/2 tsps Salt
1/2 tsp Black Pepper
1/2 Large Onion chopped
2 stalks Celery chopped
1 Yellow Bell Pepper seeded and chopped
1/4 cup grated Carrot
Instructions:
1. Boil a pot of water and add your choice of Sfoglini pasta and cook for about 8 minutes. Drain.
2. In a large bowl, mix the mayo, vinegar, sugar, mustard, salt, and pepper. Stir it all together.
3. In the same bowl, add and stir in the chopped onion, celery, pepper, carrot, (or any other veggies you’d like!) and pasta.
4. Refrigerate for about 4 hours and enjoy!
