Spence & Co. starts with premium quality fresh Atlantic Salmon. We then dry brine by hand using only kosher salt and then delicately cold smoke over Oakwood chips. Trimmed to perfection, the brown meat and pelicule (a thin skin that forms on the outside during smoking) are removed exposing the delicate center of the salmon.
