Beet and Fig Salad with Meyer Lemon Vinaigrette
You are only FIVE ingredients, and 10mins away from creating your next favorite salad. All you need are beets, asparagus, dried figs, arugula, and meyer lemon vinaigrette. Thanks to our amazing partner Cindy’s Kitchen, who creates simple locally made dressings – we have everything you need!
Ingredients:
- 1 bunch of beets
- 1 package Baby arugula
- Dried Figs, chopped
- Asparagus
- Cindy’s Kitchen Lemon Shallot Vinaigrette, to taste
Directions:
- Skin & slice beets, set aside
- Chop dried figs, set aside
- Steam asparagus for about 30 seconds
- Plate baby arugula and steamed asparagus
- To serve, add sliced beets and chopped dried figs. Finish with Cindy’s Kitchen Lemon & Shallot Vinaigrette
