Blueberry Danish


Holidays are about family & food! Never let a holiday dinner overshadow a holiday breakfast or brunch — they are both equally as important. Jackie is here to help with these amazingly easy homemade blueberry danishes. Most ingredients you may have laying around the house, if not – we have you covered. Feel free to switch blueberries for another fruit.
Ingredients:
- 1 Sheet of puff pastry
- 6oz whipped cream cheese
- 1/4 granulated sugar
- tsp vanilla extract
- Zest from 1/2 lemon
- Zuice from 1/2 a lemon
- 6oz blueberries (or any berry)
Directions:
- Thaw out a sheet of puff pastry
- Cut pastry into 6 equal sections
- Lightly score the pastry by drawing a rectangle with a knife about 1/2” from the edge
- Poke the center of the puff pastry (inside the rectangle) with a knife or fork so that it doesn’t puff up while baking
- Meanwhile, in a small bowl, mix together 6 ounces of room temperature or whipped cream cheese, 1/4 cup of granulated sugar, tsp of vanilla extract, zest from 1/2 a lemon, and juice from 1/2 a lemon
- Spread about 2-3 tbsp of filling in each section
- Scatter a handful of blueberries on each danish
- Bake in a preheated 400 degree oven for 20 minutes, rotating the pan at the 10 minute mark
