Coconut Almond Chocolate Candy Bar Cheesecake Bites

We love mini desserts! Why? Typically, they are easier to make, easier to clean up – and of course, portion control. That last phrase we might put to the test with these simple coconut almond chocolate candy bar cheesecake bites from our friend, Chris Phat. They are a TRUE mouthful – get ready!


•2x 1/2 lb containers of plain cream cheese
• 1 Package of graham bites
• 2 eggs
• 1 Almond milk bar
• 1/2 cup of shredded unsweetened coconut
• Natural raw almonds
• Tablespoon of all purpose flour
• 3/4 Cup of sugar


  1. Using a Mixer (or by hand whisking) combine eggs (1 egg at a time) with 1lb of softened plain cream cheese
  2. Gradually Add 3/4 Cup of Sugar
  3. Add 1/2 cup or more of shredded unsweetened coconut
  4. Place 1 Graham Bite at the bottom of each cup for the “crust” of the cheesecake
  5. Fill each cup with Coconut Cheesecake Mixture leaving about 1/2  of space
  6. Preheat Oven to 325° & Bake for 20-25 mins
  7. 1/2 cup (or less) of natural raw almonds spread on a baking sheet or aluminum foil. Toast in oven for 5mins.
  8. Once the cheesecakes are done baking, sprinkle extra shredded coconut on top for garnish. Add a few toasted almonds, & finish off with a piece of taza almond milk chocolate
  9. Refrigerate at least 4hrs+ or overnight before serving
