Crispy Baked Salmon with Pickled Onions


This salmon recipe is from one of our newest partners, Alexandra Riley located on Cape Cod. It features one of our favorite seasonings – everything but the bagel seasoning from local company, A Seasoned Chef.
Ingredients:
- 4 6 ounce salmon fillets (skin on)
- Salt
- Pepper
- Everything Bagel Seasoning
- 1 medium red onion
- 1/4 cup apple cider vinegar
- 1/4 cup distilled vinegar
- 1/2 cup water
- 1 TBS flake salt 1
- 1/2 TBS Honey
Directions:
Salmon
- Preheat Oven to 400 degrees
- Put everything bagel season in a small bowl
- Generously sprinkle salmon with salt and pepper and press skinless side into the seasoning mixture to coat
- Heat oil in a large oven safe heavy pan over medium high heat
- Add salmon seed side down and sear 3-4 minutes – flip salmon
- Transfer pan with salmon into oven and cook 6-8 minutes, until fish is fully cooked
Pickled Onions
- Thinly slice red onion and put in a mason jar packed to the bottom
- Add the vinegars, water, salt and honey to a saucepan and simmer until combined
- Pour over onions and let sit until cooled
- Seal the jar and store in the refrigerator overnight and up to two weeks
- Cut salmon into chunks or leave as filets
- Top over spinach and whatever fixings you would like
- Add the pickled onions
