Crispy Broccoli & Blue Ensalada

This recipe comes to you directly from our kitchen – it’s one of our favorite sides. In our opinion, this is the BEST way to eat broccoli! Crispy, cheesy, crunchy, and citrusy all in one bite!


  • 1lb Broccoli
  • 3 tbsps of EVOO
  • Juice from 1 lemon
  • 4oz pine nuts
  • 4oz crumbled blue cheese


  1. Trim the broccoli and break into florets
  2. Coat broccoli in 1 tbsp of EVOO on 350 degrees until crispy (20-30mins)
  3. Meanwhile, make the dressing by whisking 2 remaining tbsps of EVOO and lemon juice
  4. One broccoli is crispy, place florets in a bowl and add blue cheese and pine nuts
  5. Pours EVOO & lemon juice overtop and toss to coat
  6. To serve, eat warm immediately – or refrigerate for a cold salad
