Japanese Sweet Potato Fries

In Roxy’s opinion, Japanese sweet potatoes are the best variety of sweet potato. Like most potatoes, they serve as a perfect side to any protein. The wonderful bonus to Japanese Sweet potatoes, is they have enough flavor to stand alone as a nutritious snack. You can get extra fun and dip them in your favorite sauce (ketchup, Mike’s Hot honey, blue cheese etc.). Roxy loves making a large batch for her grain bowls for dinner and then adding the leftovers to her breakfast bowls in the AM. 



  1. Preheat oven to 450 F 
  2. Cut sweet potatoes into wedges 
  3. Toss with olive oil and season with fresh garlic, salt, pepper, and a generous shake of red pepper flakes 
  4. Cook for 30 – 35 minutes, tossing half way through
  5. Add to grain bowls, eat as a healthy snack or side
