Lentil Vegetable Soup

Have you experienced the power of plant-based protein? Neither have we, but we KNOW our vegetarian friend Katie has, and we are always searching for ways to eat more veggies. So stock up on lentils, onions, carrots, celery, and potatoes and give this lentil recipe a try! Your body will thank you.



1. Heat the oil in a Dutch oven or large pot. Add the onion and sauté for 1-2 min. Season lightly with salt
2. Add the flour to the onion until it is absorbed. Add carrots, celery, and potato and sauté for another 2-3 min. Add garlic and sauté another minute
3. Pour vegetable broth and water into the pot. Add the lentils, turmeric, cumin, bay leaves, salt and cayenne and bring to a boil. Reduce heat to low and let soup simmer for 40-60 minutes
4. Remove the bay leaves and enjoy!
