Moroccan Spiced Salmon With Farro, and a Yogurt Cucumber Salad

Moroccan Spice Mix

  • 1 teaspoon Cumin 
  • 1 teaspoon Ground Ginger 
  • 1 teaspoon salt 
  • 1/2 teaspoon Black Pepper 
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Coriander 
  • 1/2 teaspoon Cayenne 
  • 1/2 teaspoon Turmeric 1/2 teaspoon Paprika 

Everything else

  • 8 or 6oz of Greek yogurt 
  • 2 mini cucumbers 
  • 1 Tbsp of freshly squeezed lemon  
  • Fresh Mint 
  • 8 or 6oz of farro 
  • 3 cloves of garlic 
  • Olive Oil 


  1. Preheat oven to 350°F
  2. Prep faro according to package directions
  3. Pat salmon dry with a paper towel, then season both sides with the Moroccan spice blend
  4. Place on a parchment-lined baking sheet and bake for 10-15 minutes
  5. While the salmon is in the oven, prepare the yogurt and cucumber salad by finely mincing the garlic and cucumber
  6. Shred a few sprigs of mint into small pieces
  7. Fold garlic, cucumber, and mint into the yogurt and season with salt and lemon juice
  8.  To serve, place the salmon on a bed of farro, cover generously with yogurt and cucumber salad, and garnish with a few sprigs of mint
