Moroccan Spiced Salmon With Farro, and a Yogurt Cucumber Salad

Ingredients:
Moroccan Spice Mix
- 1 teaspoon Cumin
- 1 teaspoon Ground Ginger
- 1 teaspoon salt
- 1/2 teaspoon Black Pepper
- 1/2 teaspoon Cinnamon
- 1/2 teaspoon Coriander
- 1/2 teaspoon Cayenne
- 1/2 teaspoon Turmeric 1/2 teaspoon Paprika
Salmon
Everything else
- 8 or 6oz of Greek yogurt
- 2 mini cucumbers
- 1 Tbsp of freshly squeezed lemon
- Fresh Mint
- 8 or 6oz of farro
- 3 cloves of garlic
- Olive Oil
Directions:
- Preheat oven to 350°F
- Prep faro according to package directions
- Pat salmon dry with a paper towel, then season both sides with the Moroccan spice blend
- Place on a parchment-lined baking sheet and bake for 10-15 minutes
- While the salmon is in the oven, prepare the yogurt and cucumber salad by finely mincing the garlic and cucumber
- Shred a few sprigs of mint into small pieces
- Fold garlic, cucumber, and mint into the yogurt and season with salt and lemon juice
- To serve, place the salmon on a bed of farro, cover generously with yogurt and cucumber salad, and garnish with a few sprigs of mint
