Prosciutto Wrapped Scallops
The most perfect appetizer for all seasons! Easy, quick, and always a crowd pleaser. Another round of applause for Isabelle reminding us of our favorite appetizers, that don’t require going out to dinner to enjoy!
Ingredients:
- 12 medium – small Scallops
- 6 Thinly sliced Prosciutto
- Fresh Rosemary
- Pepper
- Olive oil
Directions:
- Pat dry all sides of each scallop with a paper towel and place in a bag with 2 strands of rosemary and enough olive oil to coat everything. Let sit for 5 minutes
- Remove 1 slice of prosciutto from the package and fold it in half across the horizontal axis – leave the fattier side down
- Take 2 scallops from the bag and place them onto one end of the prosciutto and roll tightly to the other end. The prosciutto will stick to itself , which will prevent it from unraveling
- Sprinkle scallops with pepper and a pinch of salt. Heat up your frying pan to medium high heat
- Place the scallop wrap with the fatty side of the prosciutto down onto the grill and press gently
- Let sear on medium high heat for 1 minute, then flip each wrap to sear on each side for another 30 seconds – 1 minute
- Remove loose rosemary leafs on the scallops and place onto a plate for serving
