Roasted Maple Walnut Carnival Squash

Carnival squash is a hybrid of sweet dumpling and acorn squash. It has a nutty yet sweet flavor with notes of maple and butter. Try one for yourself to see why this squash is the trendiest of the fall batch!


  • 1 carnival squashes
  • 2 tablespoons butter
  • 2 teaspoons maple syrup
  • Pinch of sea salt
  • Pinch of cinnamon (optional)
  • 1/3 cup walnuts, roughly chopped


  1. Preheat oven to 400 degrees
  2. Cut squash in half from stem to stem and clean out the seeds
  3. side up, in an oven-safe baking dish add about 1/4″ water
  4. Coat inside of each squash half with 1/2 tablespoon of butter and lightly sprinkle just a pinch of sea salt
  5. Drizzle one teaspoon of maple syrup and cinnamon inside each half
  6. Loosely cover each half with aluminum foil and bake in the oven for 50-60 minutes until squash is soft throughout
  7. Remove foil and add one quarter of chopped walnuts to each squash half
  8. Coat the walnuts and cut surfaces of squash with the sweet butter sauce
  9. Bake for an additional 10 minutes uncovered
  10. Cut each half into 2 or 3 slices and serve hot
