Shaved Brussels Sprout, Cranberry, and Toasted Pecan Salad
While the holidays typically mean meats, cheeses, and sweets — don’t forget to integrate some green (everyone will be grateful for it)! This shaved brussels sprout salad has sweet, tart, and toasted covered. All the fun seasonal flavors! Hats off to Jackie for reminding us to add some much needed health to this holiday season!
Salad Ingredients:
- 4 cups of shaved brussels sprouts (food processor or vitamix does the trick)
- 1/2 cup dried cranberries
- 1/2 cup toasted pecans (lightly toast on low + sprinkle with cinnamon, salt, and a few cracks of fresh pepper)⠀⠀⠀⠀
Dressing Ingredients:
- 1/2 cup of extra virgin olive oil
- 2 tbsp apple cider vinegar
- 2-4 tbsp maple syrup (depending on how sweet you want it, taste as you go)
- zest from 1 orange
- 3 tbsp freshly squeezed orange juice
- Salt + fresh cracked pepper
Directions:
- Combine all ingredients in a salad bowl
- Ensure all ingredients are room temp and combine using a blender (if possible) – dress salad before serving
