The Pig Rock Sausage Famous Chorizo Burgers

We’re excited to announce that on Tuesday January 20th at 6pm, we are partnering with local superstar Pig Rock Sausage to host a cooking live segment on instagram featuring their FAMOUS chorizo burgers. So grab a glass of wine, tune in with Pig Rock…and we’ll walk you through the process step-by-step. At the end, you’ll have learned a few kitchen tricks and dinner will be READY!

  • 32 ounces loose chorizo (no casing) – makes 4 6oz patties (save leftovers for breakfast tacos)
  • 4 Tablespoons Guacamole (recipe below)
  • 4 Slices Pepperjack Cheese
  • 4 Tablespoons Caramelized Onions
  • 4 Hamburger Buns (buttered)
  • Tortilla chips

For the Guac:


  1. Make 6-7 “hamburger” patties with the sausage meat
  2. Grill or cook in a pan until cooked through on both sides
  3. Top with 1 slice of pepperjack cheese and 1 tablespoon of caramelized onions.  Allow cheese to melt
  4. Toast burger buns (cut side) on grill or griddle
  5. Make Guacamole: Puree Onions, serrano peppers, cilantro, lime juice, sugar and salt in a food processor until smooth
  6. Place in a bowl with avocados and mash to a paste
  7. Add tomatoes, adjust seasoning if necessary
  8. Place burger on buns and top with 1 TBS guacamole (more if desired)
  9. Serve with tortilla chips
